Recipe Spelt pancakes stuffed red rice and tofu

- 240 g. red rice
- 1 onion
- 500 g. pumpkin
- 60 g. peeled walnuts halves
- 400 g. fresh mushrooms
- 80 g. fresh tofu
- fresh thyme
- Sea salt
- tamari
8 medium crepes
- 50 g. Spelt wholemeal
- 1 egg
- 2 tablespoons olive oil
- 115 ml. of soymilk
- Pinch of sea salt
Preparation
1. Finely crush all the ingredients of the mass of crepes, in a blender. Let cool in refrigerator 30 minutes. Lava red rice. Boil 480 ml. water and cook over low heat for 30 minutes, adding salt.
2. Peel and chop the onion into small pieces. Cut the pumpkin into small cubes. Wash and cut the mushrooms into quarters. Cut the tofu into smaller squash dice.
3. Sauté onion and tofu with oil until onion is tender and golden tofu. Then add the pumpkin, mushrooms and walnuts. Let it be done about 8 minutes. Stir in chopped fresh thyme and tamari.
4. In a hot pan with a little oil, made the crepes.
5. Mix rice with vegetables, stuffed crepes and served hot.
